If there’s one thing I love it’s cooking tasty, healthy meals from scratch. I like experimenting with flavours and different recipes to see what I can create and whenever I find something amazing I jot in down in my recipe book to use again and again! The trouble is like most people, I don’t always have the time to try something new in the week because I’m so short on time. That’s why one pot dinners are so amazing! I often turn to recipes that only use one pan to keep things fresh because they are so quick and simple to make.
I’ve made a list of 5 one pot dinners that will spruce up your weeknights with minimal effort!
1. One Pot Lemon Herb Chicken & Rice
Zesty, healthy and super tasty – lemon chicken is one of my favourites! This recipe takes just 30 minutes to make and it’s full of buttery, herby flavour. If you’re feeling indulgent use chicken thighs instead of breast meat, they’re higher in fat but much juicier.
2. One Pot Spanish Chickpea & Spinach Stew
This is a good one for those veggies and vegans out there (or for meat-free Mondays). I love Spanish cooking, and this chickpea and spinach stew is fresh tasting and packs a punch with it’s rich tomato flavour and sweetness from the almonds.
3. One Pot Healthy Chicken Chow Mein
Craving Chinese food but trying to eat well? This healthy alternative to chicken chow mein should do the trick, plus it’ll be ready to gorge on in less than half an hour! This recipe uses zucchini instead of egg noodles making it a much healthier alternative to your local Chinese takeaway.
4. One Pot Jamaican Jerk Chicken
Last year I tried quite a few Caribbean style and Jamaican recipes, something I’d never tried before. I love how much of a kick Caribbean food has. This recipe takes a little longer (about 45 minutes), but if you’re looking to get your fix with minimal effort, this one pot jerk chicken should be just what you’re looking for.
5. One Pot Creamy Chicken Pasta
Nothing is more comforting that a big bowl of pasta and this one pot creamy chicken pasta is sure to hit the spot! Probably the most indulgent recipe on the list, but everybody deserves a treat! Loaded with cream, sun-dried tomatoes and mushrooms this dish is rich and full of flavour.
